For an importer or ethnic grocery chain, ready-to-eat curries in retort pouches are attractive for one practical reason: they do not need a cold chain. Here is what that means in day-to-day terms, and what to check with any supplier before you place a first order.
What a retort pouch is
A retort pouch is a flexible, multi-layer pack. The curry is cooked, filled into the pouch, sealed, and then heat-processed inside the sealed pack in a retort (a pressure steriliser). Because the food is processed after sealing, it can be kept at room temperature until the pouch is opened. This is the same principle as a canned food, in a lighter and flatter pack.
Shelf life: what we quote
Farmour Ventures' retort range has an 18-month shelf life at room temperature, unopened. When you compare suppliers, ask three things: how many months of shelf life remain at the time of shipment, how the shelf life is stated on the label (best-before or expiry date), and how that date is coded on each pouch and carton so you can trace a batch.
Storing pouches in your warehouse
- Room temperature, dry store. No refrigeration and no reefer container is needed for unopened pouches; they ship in standard dry containers.
- Keep away from heat and direct sun. A cool, dry, shaded warehouse corner is better than a bay next to a loading door in summer.
- Protect the pouch. Do not stack cartons beyond the limit printed on the outer carton, and avoid sharp-edged pallets or strapping that can press into the pouches.
- FIFO. Rotate stock first-in, first-out and check the date code when you receive each lot.
Once a pouch is opened
Treat an opened pouch like any home-cooked curry. Eat it the same day, or keep it chilled and finish it soon. Printing a simple "after opening" line on your retail carton or shelf talker avoids customer complaints.
What to inspect when a shipment arrives
- Pouches should be flat and firm to the touch, with clean, intact seals. A swollen or leaking pouch should be set aside and reported with its batch code.
- Cartons should be dry, undamaged and clearly marked with product name, batch and date code.
- Labels should match your market's rules for language, ingredients, allergens and importer details. Tell us your destination country early so the label is planned from the start.
Planning your first order
Most importers start with a small mix of best-selling curries, rice dishes and desserts, then widen the range. Because the range has over 100 products, you can choose a few vegetarian and non-vegetarian lines and test them on shelf before committing to volume. If you want a flavour that is not in the range, our custom food manufacturing service can develop a recipe to your specification, with an NDA on request. You can also combine retort pouches with Kerala pickles and frozen Kerala breakfast in one shipment.
