Frozen Kerala Breakfast for Importers: Cold Chain

Idiyappam, appam and puttu sell well in grocery stores and restaurants wherever Malayali communities live, but frozen food only works if the cold chain holds from the factory to your freezer shelf. This guide covers what an importer should plan before ordering a frozen Kerala breakfast range from India.

Which products travel well frozen

  • Idiyappam: steamed string hoppers (white rice, ragi and other variants) keep their shape when frozen in a single layer and packed in trays or pouches.
  • Appam and porotta: pre-cooked, frozen and reheated on a tawa or in a steamer. Porotta is popular with restaurants that do not have a trained porotta master.
  • Puttu: steamed or microwaved to serve.

Choose a short first list of two or three lines. It is easier to sell through a small range than to hold many slow-moving items in a cold store.

Keep the cold chain unbroken at -18 °C

Frozen breakfast needs a continuous -18 °C chain: freezing at the factory, a cold room while waiting for the container, a reefer container at sea, and your cold store on arrival. Every break, even a few hours on a warm dock, shows up as ice crystals, sticky pieces and soft texture. Before you order, ask your freight forwarder how the reefer is monitored, who handles the cold store at both ends, and what temperature records you will receive.

Container planning

Frozen breakfast is usually shipped in a full reefer container, so volume matters. Many importers combine several lines in one container to reach a sensible load without overstocking a single item. Decide your cold-store capacity, your expected monthly sales per item and how many weeks of stock you are comfortable holding.

Packing and labelling

  • Pack size: retail packs for grocery shelves, larger packs for restaurants and caterers.
  • Label: ingredient list and storage instructions in the language your market requires.
  • Instructions: simple reheating steps on the pack reduce complaints and returns.

Samples before a container

For a new buyer, the practical sequence is samples, then a trial order, then a regular container. Tell us the market, the retail or food-service use, and the pack sizes you want, and we will confirm what can be shipped frozen to your destination and what labelling you need.

Help your customers reheat it

Idiyappam does best steamed for a few minutes, appam on a hot tawa or in a steamer, and porotta on a tawa with a little oil. Clear reheating guidance on the pack makes the frozen version taste close to fresh and keeps shoppers coming back.
